This is a Beet Yogurt Dip recipe I found on Edible Communities. The beets were pretty red when I shredded them, but as soon as I mixed them with the yogurt this beautiful magenta color appeared.

I served it with cucumbers, snap peas, and pink radishes for dipping. It would also be good served with tortilla chips or pita bread if that’s your business.

I have to say, I think it’s a little confusing for my brain to eat something of this color that also has a savory garlic flavor. Most things edible that are also this vibrant are either fruits or artificial candy products, and the flavor of this dip is so far from those flavors! If you can get past the confusing color, it’s a pretty tasty dip.

I changed the recipe a just bit based on the amounts of things I had on hand and my personal preferences. My version was made with:

9 oz cooked beets, shredded
1 cup Greek yogurt
1 glove garlic, minced
1 tbsp lemon juice
1/8 tsp salt
Pepper to taste
Garnished with chives
