Seasonal Saturday: Eat the Rainbow!

To help celebrate the end of the school year (for the kids and for me!), I splurged on this delicious rainbow of food!

â €

It’s been two weeks since I’ve been able to make it out to the farmers market. Instead I was furiously finishing assignments, projects, and studying for exams. It feels so good to be done with the term!

â €

This has been the most challenging term of the entire 4 years I’ve been back in school. Between the death of my father, the global pandemic, and the ramping up of the movements to end police brutality and demand racial justice, focusing on my school work has felt near impossible at times.

â €

I look forward to a week off before summer term begins. One of my public health classes left me inspired to start a couple new food justice projects, so I plan to use this week to brainstorm those ideas.

â €

Here’s this week’s gorgeous rainbow assortment from the PSU Portland Farmers Market:

â €

Strawberries, boysenberries, blackberries, raspberries, cherry tomatoes, zucchini, purple cabbage, basil, kale, and salad greens from Groundwork Organics

â €

Beets, cucumbers, and siletz tomato (not pictured) from Gathering Together Farm

â €

Broccoli from Sun Gold Farm

Asparagus from Winters Farms â €

Pastured ground beef and chicken eggs from SuDanFarm (not pictured)
